The Guanacaste Cookbook: The Peasant Lunch, Roasted Loin

Time needed: 25 minutes.

Roasted Loin Guanacasteco

  1. 1 Kilo of Loin

  2. Add salt at your wish

  3. 6 Eggs

  4. 2 Garlics

  5. 1 medium onion

  6. Butter


Garlic is mashed with salt to flavor the loin and roast.
Crumble the roasted loin. Put the butter to heat, add the
meat, eggs, and onion, stir constantly until frying
eggs. Once cooked, it is wrapped in a banana leaf.
Accompany it with creole omelette wrapped in leaves.
