Nicoyanos try to rescue the culinary heritage of the canton (Nicoya, Guanacaste, Costa Rica)

Preserving and transmitting the gastronomic heritage of the canton of Nicoya, in Guanacaste, is the purpose of the recipe book “Comidas Tradicionales Nicoyanas”, an initiative with culinary contributions from multiple members of the community, which became a project that bears the canton’s food tradition .

The traditional cuisine of Nicoya stands out for a great variety of corn-based recipes, as well as other ingredients in the area, which play an important role in the economy, being the sale of food a livelihood for many families. The presentation of the recipe book “Traditional Meals Nicoyanas”, will be on Saturday, February 29, at 10 am, in the Nicoa Market, located in front of the building of the Courts of Justice in Nicoya.

During the activity, the audience will be able to taste and buy a variety of dishes, such as breads, drinks, tiste, pozol, ayaco, Creole chicken with milk, chilote stew, rosquillas, popped corn tanela, perrerreque and much more.

“This recipe book is a sample of the nutritional, agricultural, environmental, and economic knowledge of all the people who participated with their recipes, at fairs held in 2016 and 2017, at the Nicoa Market, in Nicoya, from where workshops on food tradition, culinary recipes contests and cultural traditions resurfaced in the canton, ”said Vera Vargas, in charge of the Office of Cultural Management of Guanacaste, which is part of the Directorate of Culture (DC) of the Ministry of Culture and Youth (MCJ). “

The recipes of the dishes presented in the recipe book also provide a diverse and extensive cultural richness throughout the Nicoyan territory, which allow new generations to feed on body and soul, so that the legacy of local food nourishes the present and future of the population, ”said Vargas.

This activity is organized by the Office of Cultural Management of Guanacaste, of the DC of the MCJ, the University of Costa Rica (UCR), and has the support of the Municipality of Nicoya and the Association of Entrepreneurs of the Nicoa Market. The cookbook is part of a process promoted by the Cantonal Inter-Institutional Coordination Committee (CCCI) and the joint inter-institutional Alliance in which the MCJ DC and the UCR intervene.
